A yummy salad with quinoa, fresh veggies and avocado. This makes for a perfect light lunch!

2 cups cooked Quinoa
1 cup Corn, Cut Off The Cob or frozen
1 cup Black Beans, Rinsed And Drained
1 cup Red Bell Pepper, chopped
¼ cup Red Onion, Chopped
½ whole Lime, Juiced
¼ cup avocado or olive oil
¼ cup chopped cilantro (optional)
1 teaspoon Salt
1 teaspoon Pepper
½ whole Avocado, Cut Into Small Pieces

Meanwhile combine the corn, black beans, red bell pepper and red onion in a bowl. Toss to
combine.  Add the cooked quinoa into the mixture, and then add the lime juice, oil, cilantro, salt and pepper
to taste. Add additional seasonings, if desired.  Add the chopped avocado right before serving.  Enjoy!!
